Bisara - Crushed dried beans stewed with greens

Ingredients

1. 1/4 kg crushed dried beans (Fuul Madshush)
2. 3 onions
3. 15 garlic cloves
4. 1 cup dill
5. 1 cup parsley leaves
6. 1 cup coriander leaves
7. 1 teaspoon cumin power
8. 1 tablespoon mint powder
9. 2 tablespoons oil
10. Salt and pepper
11. 1 tablespoon dry Mulukhiya (optional)
12. 1 hot chili pepper (optional)

Procedure

1. Place the crushed beans, garlic, dill, parsley, coriander, and two onions on flame with plenty of water.
2. Boil until well cooked, about 70 to 90 minutes.
3. Press in juice extractor or whirl in blender, then pass through a fine wire sieve.
4. Return to flame, add cumin, mint salt, optional ingredients, and cook for 10 minutes.

5. Slice the remaining onion very thinly and fry to golden brown color.
6. Remove the onions, strain the oil into the bisara, and pour into a shallow serving dish.
7. Decorate with the fried onions.
