Ruzz Ahmar - Rice with Onion

This dish is always served with fish.


1. 2 cups rice
2. 2 onions, chopped finely
3. 3 cups water
4. 2 tablespoons oil
5. teaspoon salt
6. 1 tablespoon of tomato paste


1. Soak rice in water for 20 minutes.
2. Fry onions to a rich brown.
3. Add water and salt and boil, then stir in the rice.
4. Cover, lower heat to minimum, and allow slow cooking for 15-20 minutes.
5. For variety, stir 1 tablespoon of tomato paste into the water before starring in the rice.
