Egyptian Recipes - Halwa Almawlid (Semsemiah, Foliah, and Hommosiah halwa)


Halwa Almawlid (Semsemiah)

Ingredients

1. 1 1/2 cup roosted sesame seeds.
2. 3/4 cup sugar.
3. A little cold water.
4. 1 soup spoon oil.
5. 1 tea spoon lemon juice.
6. Glad Rap or Solofan paper to cover.

Procedure

1. Lightly roost the sesame seeds.
2. Put the sugar in a pot, then, add the water in a low heat. Stir until the sugar milts.
3. Add the lemon juice and the roosted sesame seeds. Stir on a low heat.
4. Oil a cutting board. Put the hot dough on the oiled board.
5. Roll the hot dough to one centimeter thick.
6. Leave the hot dough on the cutting board until it becomes warm.
7. Cut the warm dough into different Semsemiah shapes with a cookie cutter.
8. Cover the Semsemiah shapes with Glad Rap or Solofan paper to cover.
9. Put the covered Semsemiah into an air tight tin (box).


Halwa Almawlid (Foliah)

Ingredients

1. 1 pound un-salted un-skinned roosted peanuts.
2. 1/2 cup sugar.
3. A little cold water.
4. 1 soup spoon oil.
5. 1 tea spoon lemon juice.
6. Glad Rap or Solofan paper to cover.

Procedure

Follow the Semsemiah recipe above, substituting the peanuts for the roosted sesame seeds.


Halwa Almawlid (Hommosiah)

Ingredients

1. 1 pound un-salted un-skinned roosted hommos.
2. 1/2 cup sugar.
3. A little cold water.
4. 1 soup spoon oil.
5. 1 tea spoon lemon juice.
6. Glad Rap or Solofan paper to cover.

Procedure

Follow the Semsemiah recipe above, substituting the roosted hommos for the roosted sesame seeds.
