Egyptian Recipe - Shrimp Scampi with Rice cooked in the Oven, Shellfish: Crabs, Prawns and Shrimps with cooked rice, Fried Shrimps


Shellfish

1) Shrimp Scampi (Gambary) - Gambari with garlic and rice cooked in the Oven

Ingredients

1. Two lb. raw medium to large shrimp
2. Eight medium to large cloves garlic (pressed or minced)
3. Four tsp. lemon juice
4. Half stick butter
5. Three tsp. dried parsley
6. Salt and pepper to taste
7. Half a cup of water

Procedure

1. Shell and devine shrimp; place in baking pan.
2. In a small pot, melt butter.
3. Add all the remaining ingredients except parsley and simmer (broil at low heat for) 5 minutes.
4. Remove from the oven, pour over raw shrimp and add the parsley and let stand for at least 5 minutes.
5. Broil 5 minutes until shrimp are cooked (Do not overcook).
6. Serve over hot cooked rice or pasta.


2) Kaburya - Crabs

Ingredients

1. 6 Crabs
2. 4 Onions, cut into quarters
3. 3 lemons, chopped with their rings
4. Salt and pepper to taste

Procedure

1. Wash crabs under running water until water remains clear.
2. Combine all ingredients over low flame and cook with no water.
3. Toss every few minutes.
4. Cooking time will depend on size of crabs, but after about 8 to 10 minutes try one to see if it is cooked enough.
5. Eat them in this state with no dressing or further cooking.
6. Break the shell of the body and legs, extract the flesh.
7. Serve and enjoy.


3) Gambari - Prawns and shrimp, to cook

Ingredients

1. 1 kg prawns or shrimp
2. 5 Onions, cut into quarters
3. 3 lemons, chopped with their rings
4. 1 teaspoon cumin
5. Salt and pepper to taste

Procedure

1. Wash crabs under running water until water remains clear.
2. Combine all ingredients in pot over moderate flame and cook with no water.
3. Toss every few minutes.
4. Cooking time will depend on size of prawns, but after about 8 to 10 minutes try one to see if it is cooked enough.
5. Cool, shell.
6. 1 cup Salsit Gambari (Prawn Sauce): Do not discard heads, shells, and juice, but whirl in blender at high speed. Strain and use as a flavoring sauce, with rice, tahina, etc.
7. Remove thin black sand bag on back (if present).
8. Serve and enjoy.


4) Sayadiyit Al-Gambari - Prawns and shrimps, with cooked rice

Ingredients

1. 1 kg prawns or shrimp
2. 2 cups rice
3. 2 Onions, chopped very finely
4. 1/2 cup oil
5. 4 cups water
6. Salt and seasoning to taste

Procedure

1. Wash prawns thoroughly and shell.
2. Fry onions until they wilt, then set aside.
3. Add prawns, seasoning, and enough water to cover and cook for about 10 minutes.
4. Increase water to about 3 cups.
5. Return fried onion to cooking pot.
6. Add rice, stir and cook over low flame for about 30 minutes until rice is tender.
7. Serve and enjoy.


5) Gambari Ma'li - Shrimps, fried

Ingredients

1. 1kg very small shrimp
2. 2 tablespoons flour
3. 1/2 cup milk
4. 1 egg
5. 1/2 cup water
6. 1 teaspoon cumin
7. oil
8. Salt, pepper, and seasoning to taste

Procedure

1. Wash thoroughly and shell.
2. Mix flour, milk, water, egg, and cumin to form a thin batter.
3. Dip shrimp in batter and deep fry in sizzling oil.
4. Remove onto absorbent paper and sprinkle with cumin, salt, papper, and seasoning.
5. Serve and enjoy.


6) Gambari Bi-l-Ruzz - Prawns and Shrimps, with cooked rice

Ingredients

1. 1/2 kg prawns or shrimp
2. 2 cups rice
3. 1 Onions, chopped very finely
4. 1/2 cup oil
5. 2 cups water
6. 1 cup Salsit Gambari (Prawn Sauce): Do not discard heads, shells, and juice, but whirl in blender at high speed. Strain and use as a flavoring sauce, with rice, tahina, etc.
7. Salt and seasoning to taste

Procedure

1. Wash prawns thoroughly and shell.
2. Fry onions until they wilt, then set aside.
3. Add prawns sauce, seasoning, and enough water to cover and bring it to boil.
4. Add rice, stir and cook over low flame for about 30 minutes until rice is tender.
5. Stir prawns into rice.
6. Serve and enjoy.
